INGREDIENTS

  • 1 package prepared Mexican plant-based vegetable protein
  • 2 cups dry long grain rice or 4 cups dry minute rice, preferably brown
  • 2 tablespoons vegetable oil
  • 2 onions, chopped
  • 4 garlic cloves, chopped
  • 2 carrots, shredded
  • 1 ½ cups jarred salsa

Optional Topping Ideas

  • shredded cheese
  • 1 can (398 mL) chickpeas or kidney/black beans, rinsed and drained
  • fried green peppers and onions
  • chopped tomatoes
  • sliced green onion
  • sliced hot peppers
  • sour cream or plain yogurt
  • avocado slices or guacamole

PREPARATION

  1. Cook the rice and the plant-based vegetable protein according to package directions.
  2. Meanwhile, in a large frying pan, fry the onions, carrots and garlic in the oil until the onions are soft.
  3. Add the salsa and the plant-based vegetable protein until heated through.
  4. In each bowl, place rice, followed by the salsa mixture, and then top with your chosen toppings.
