Shrimp Stir-fry

INGREDIENTS

  • 2 tablespoons vegetable oil
  • About 300 grams frozen shrimp
  • 2 tablespoons sweet Thai chili sauce or any Asian stir-fry sauce
  • 1 onion, sliced
  • 2 fresh peppers, sliced
  • 2 cups frozen mixed vegetables, any blend
  • ¼ cup + 2 tablespoons water
  • 2 teaspoons soy sauce
  • ½ teaspoon garlic powder or 1 fresh garlic clove, minced
  • 1 tablespoon sugar or honey
  • 1 tablespoon sweet Thai chili sauce or any Asian stir-fry sauce
  • 2 teaspoons corn starch or 1 tablespoon flour

PREPARATION

  • Place the shrimp in a medium size bowl. Cover with boiling water to thaw.
  • Meanwhile, place the frozen vegetables in a medium bowl. Cover with boiling water to thaw.
  • Drain the shrimp.
  • In a large frying pan, heat 1 tablespoon of oil on medium heat. Add the shrimp. Cook stirring constantly until they are heated through.
  • Do not overcook.
  • Add 2 tablespoons Thai chili sauce or stir-fry sauce.
  • Stir continuously until all the shrimp are coated. Set aside.
  • In a small bowl, stir together all the sauce ingredients until smooth.
  • In the same frying pan, heat the leftover oil and fry the onion until soft. Add the pepper.
  • Drain the frozen vegetables and add to the pan. Cook on high heat stirring often until the peppers are cooked to your liking.
  • Add the sauce. Cook stirring constantly until the sauce thickens.
  • Serve over rice, noodles or cauliflower rice.
