Shrimp Stir-fry

INGREDIENTS
- 2 tablespoons vegetable oil
- About 300 grams frozen shrimp
- 2 tablespoons sweet Thai chili sauce or any Asian stir-fry sauce
- 1 onion, sliced
- 2 fresh peppers, sliced
- 2 cups frozen mixed vegetables, any blend
- ¼ cup + 2 tablespoons water
- 2 teaspoons soy sauce
- ½ teaspoon garlic powder or 1 fresh garlic clove, minced
- 1 tablespoon sugar or honey
- 1 tablespoon sweet Thai chili sauce or any Asian stir-fry sauce
- 2 teaspoons corn starch or 1 tablespoon flour
PREPARATION
- Place the shrimp in a medium size bowl. Cover with boiling water to thaw.
- Meanwhile, place the frozen vegetables in a medium bowl. Cover with boiling water to thaw.
- Drain the shrimp.
- In a large frying pan, heat 1 tablespoon of oil on medium heat. Add the shrimp. Cook stirring constantly until they are heated through.
- Do not overcook.
- Add 2 tablespoons Thai chili sauce or stir-fry sauce.
- Stir continuously until all the shrimp are coated. Set aside.
- In a small bowl, stir together all the sauce ingredients until smooth.
- In the same frying pan, heat the leftover oil and fry the onion until soft. Add the pepper.
- Drain the frozen vegetables and add to the pan. Cook on high heat stirring often until the peppers are cooked to your liking.
- Add the sauce. Cook stirring constantly until the sauce thickens.
- Serve over rice, noodles or cauliflower rice.
