Sausage and Potato Hash

Sausage and Potato Hash recipe

INGREDIENTS

  • 2 medium-size onions, finely chopped
  • 2 green peppers, chopped
  • 1 teaspoon vegetable oil
  • 6 small breakfast sausages, roughly chopped or 2 plant-based sausages, roughly chopped
  • 4 medium-size leftover cooked potatoes, diced
  • 1 teaspoon chili powder or paprika (optional)
  • ½ teaspoon powdered chicken/vegetable soup base or ½ cube chicken/vegetable soup base
  • ¼ cup water

PREPARATION

  1. Heat oil in a large frying pan over medium heat. Stirring often, cook the onion and green pepper until soft then remove from pan.
  2. In the same pan, cook breakfast sausages. Use the stirring spoon to break up the sausages into smaller pieces as they cook.
  3. Add the potatoes, water, and seasoning. Stir well until the water is gone then mix in the onions and green peppers until heated through.
