Pineapple Sweet and Sour Pork

INGREDIENTS
• 2 onions, chopped
• 4-6 garlic cloves, roughly chopped, or 2 teaspoons garlic powder
• 2 pounds pork stew cubes or diced pork shoulder, trimmed of fat and gristle
• 1 can (540 mL) pineapple tidbits
• 2 cups frozen vegetable mix or fresh chopped vegetables like carrots and peppers
• 2 tablespoons vinegar or lemon juice
• 2 tablespoons brown sugar
• 3 tablespoons soy sauce, preferably low sodium
• ½ teaspoon black pepper
PREPARATION
• In a large pot, fry the onion, the garlic and the pork together until browned
• Add the rest of the ingredients
• Bring up to a boil, lower the heat and cover
• Cook for about 60 minutes
• Add more pepper or garlic to taste
• Serve over rice or quinoa
