No-Cook Seafood Noodle Bowls
This no-cook recipe is packed with flavour and takes less than 15 minutes to prepare.

INGREDIENTS
- 1 package (about 450 grams) rice noodles
- 4 cups boiling water
- ¾ cup Asian ready-made cooking sauce like teriyaki or honey garlic
- 2 tablespoons peanut or almond butter or tahini
- 2 tablespoons boiling water
- 3 cups fresh vegetables like
- fresh sliced mushrooms,
- grated carrots, thinly sliced
- lettuce, cabbage slaw
- 1 package (around 350 grams) crab meat, shredded or 1 cooked shrimp ring
Optional Toppings
- 2 green onions, finely sliced
- Chili flakes
- 2-4 sliced green onion
- Lemon zest
- Sesame seeds
PREPARATION
- In a large bowl or pot, place the noodles covered in boiling water. Cover with a plate or a pot lid.
- In a small bowl stir together the cooking sauce, nut butter or tahini and 2 tablespoons boiling water until smooth.
- Prepare the vegetables.
- 10 minutes later, the noodles should be soft. Drain any leftover water.
- Top the cooked noodles with the vegetables, then the crab or shrimp. Drizzle on the sauce followed by any additional toppings of your liking.
- Stir right before serving.
