Jeweled Wild Rice
This dish goes well paired alongside with chicken or turkey.

Ingredients
- ¼ cup vegetable oil
 - 1 onion, finely chopped
 - 2 cups wild rice blend
 - 2 apples, roughly chopped
 - mushrooms, finely chopped
 - ¼ cup walnuts or pecans, roughly chopped
 - ¼ cup cranberries or chopped apricots/dried mango
 - ½ teaspoon each salt and pepper
 
Preparations
- Preheat the oven to 350°F.
 - In a large bowl stir together all the ingredients.
 - Grease a large casserole dish.
 - Spread out the rice mixture in the casserole dish.
 - Stir in the water into the rice mixture according to package directions. For example, for 2 cups of rice often the package calls for 4-6 cups of water depending on the type of rice.
 - Place a lid or aluminum foil on the casserole dish and place in the oven.
 - Check the rice after 45 minutes. If the rice is tender, remove the lid and let cook for another 20-30 minutes or until the liquid is absorbed. If the rice is dry, add some more water.
