Hard Taco Family Meal
This is an easy-to-make, homemade hard taco recipe for both meat eaters and vegetarians.

INGREDIENTS
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 1-pound lean ground meat or 1 package (about 300 grams) plant-based ground meat alternative
- 1 can kidney or black beans (about 550 mL), rinsed and drained
- 2 cups tomato salsa
- 1-2 teaspoons chili powder (adjust to your taste)
- 2-4 cups chopped iceberg lettuce or cabbage coleslaw mix
- 2 cups shredded cheese or non-dairy shreds
- 1 box hard tacos (contains 10 hard tacos)
PREPARATION
- Meat version: In a large skillet, add the oil, onion, and meat. Cook for 10-12 minutes or until the meat is well-cooked. Stir often, breaking apart larger pieces of meat.
- Plant-based version: In a large skillet, add the oil and onion. Cook for 10-12 minutes or until the onion is golden brown. If onions are dry, add 1 more tablespoon oil.
- Add the canned beans, 1 cup tomato salsa and the chili powder.
- Stir until combined. Cook for another few minutes until heated through.
- Let the family assemble their own tacos by using the meat mixture as the base topped with the remaining tomato salsa, the shredded lettuce or cabbage and the shredded cheese.
