Gluten Free Egg Bites

These are just like the ones you buy at a fancy coffee shop but made fresh at home.

SERVINGS

Serves: 12 egg bites

INGREDIENTS

  • Vegetable oil
  • 6 eggs
  • 1 cup cottage cheese
  • 2 slices bacon, sliced thinly or 2 plant-based sausages roughly chopped
  • ½ cup shredded cheese

PREPARATION

  1. Preheat the oven to 325°F.
  2. Grease a muffin tin very well with vegetable oil.
  3. Stir everything except the shredded cheese together in a large bowl.*
  4. Spoon the egg mixture evenly into the muffin slots. Sprinkle evenly with cheese.
  5. Bake for about 20-25 minutes or until a toothpick placed in the middle of an egg bites comes out clean.
  6. Let sit for 15 minutes before removing from the pan.

* For fluffier egg bites, blend the eggs and cottage cheese in a blender first before mixing in the bacon. Make and freeze these ahead of time. They can be stored for 8 months in the freezer.
