SERVINGS
INGREDIENTS
- 1 small bag/box (about 450 grams) spaghetti noodles,
- 100% whole wheat if available
- 1 jar (about 600 grams) tomato sauce
- 1 package (about 227 grams) fresh mushrooms, sliced or 1 can sliced mushrooms, well-drained
Shrimp:
- 1-2* small (227 grams) shrimp ring(s), thawed
- 1 teaspoon flour
- Salt and pepper
- 1 tablespoon vegetable oil
- 3 cloves garlic chopped or 1½ teaspoons jarred garlic or ½ to 1 teaspoon garlic powder
- Parmesan cheese (optional)
PREPARATION
- Cook the noodles according to the package directions.
- Add the tomato sauce and mushrooms to a medium pot, cover and bring up to a low boil.
- Meanwhile make the shrimp:
- Drain the shrimp of any liquid.
- Dab the shrimp with paper towel to soak up any extra liquid.
- Sprinkle the shrimp with flour, salt, pepper and garlic powder (if not using fresh or jarred).
- Heat the oil in a large, non-stick frying pan. Once the oil is sizzling, add the shrimp and the garlic.
- Cook for about 1 minute then stir all together to cook the other side of the shrimp. Remove from the pan.
- Once the noodles are cooked and drained, everyone can assemble their own plate by layering the spaghetti, topped with tomato sauce then cooked shrimp. Top with parmesan cheese (optional).
