Fall Comfort Apple Cake
This is an easy, foolproof Fall apple cake recipe baked with chunks of apples. It’s delicious on its own or can be topped with vanilla frosting.

- 3 apples, washed and cut into small cubes
- 3 tablespoons white sugar
- 2 tablespoons lemon or orange juice
- 3 tablespoons plain oats
- 1 teaspoon cinnamon
- 1 white pre-packaged cake mix (about 461 grams)
- 1/3 cup vegetable oil
- 4 eggs
- 1 cup milk
PREPARATION
- Preheat the oven to 350° F.
- Grease the baking pan(s) of your choice. You can use two loaf pans or two 8″ round pans or one 13″ x 9″ baking dish.
- In a medium bowl, add the first five ingredients. Stir and let sit to soften the oats.
- In a large bowl, add the rest of the ingredients. Mix using a hand blender on medium speed or beat with a fork for 2 minutes.
- Stir in ½ cup of the cake mixture into the apple and oat mixture.
- Pour half of the cake mixture into the bottom of the pan(s). Top with the apple and oat mixture. Top with the remaining cake mixture.
- Bake for 30 to 45 minutes, until a toothpick inserted into the middle of the cake comes out clean.
- Serve as is or let cool completely and frost with vanilla icing.
