Fall Comfort Apple Cake

This is an easy, foolproof Fall apple cake recipe baked with chunks of apples. It’s delicious on its own or can be topped with vanilla frosting.

INGREDIENTS

  • 3 apples, washed and cut into small cubes
  • 3 tablespoons white sugar
  • 2 tablespoons lemon or orange juice
  • 3 tablespoons plain oats
  • 1 teaspoon cinnamon
  • 1 white pre-packaged cake mix (about 461 grams)
  • 1/3 cup vegetable oil
  • 4 eggs
  • 1 cup milk

PREPARATION

  1. Preheat the oven to 350° F.
  2. Grease the baking pan(s) of your choice. You can use two loaf pans or two 8″ round pans or one 13″ x 9″ baking dish.
  3. In a medium bowl, add the first five ingredients. Stir and let sit to soften the oats.
  4. In a large bowl, add the rest of the ingredients. Mix using a hand blender on medium speed or beat with a fork for 2 minutes.
  5. Stir in ½ cup of the cake mixture into the apple and oat mixture.
  6. Pour half of the cake mixture into the bottom of the pan(s). Top with the apple and oat mixture. Top with the remaining cake mixture.
  7. Bake for 30 to 45 minutes, until a toothpick inserted into the middle of the cake comes out clean.
  8. Serve as is or let cool completely and frost with vanilla icing.
