California Rice Bowls
These rice bowls are the perfect solution when you don’t know what to cook for dinner. Plus this meal combo is filled with vegetables and protein — a power combo that will leave you full and satisfied.

INGREDIENTS
- ½ cup sour cream or plain yogurt
- 2 tablespoons taco seasoning or ½ cup tomato salsa
- 3 ½ cups cooked rice, preferably brown rice
- 2 chicken breasts, cooked and cubed
- 1 cup canned black beans, rinsed & drained
- 1 ½ cups corn niblets, canned or thawed if frozen
- 2 ripe avocados, flesh scooped out
PREPARATION
- Mix together the first 2 ingredients. Set aside.
- Divide the rice between the 5 bowls.
- Divide the rest of the ingredients between the 5 bowls.
- Right before serving, drizzle bowls with the sauce mixture.
