California Rice Bowls

These rice bowls are the perfect solution when you don’t know what to cook for dinner. Plus this meal combo is filled with vegetables and protein — a power combo that will leave you full and satisfied.

California Rice Bowls

INGREDIENTS

  • ½ cup sour cream or plain yogurt
  • 2 tablespoons taco seasoning or ½ cup tomato salsa
  • 3 ½ cups cooked rice, preferably brown rice
  • 2 chicken breasts, cooked and cubed
  • 1 cup canned black beans, rinsed & drained
  • 1 ½ cups corn niblets, canned or thawed if frozen
  • 2 ripe avocados, flesh scooped out

PREPARATION

  • Mix together the first 2 ingredients. Set aside.
  • Divide the rice between the 5 bowls.
  • Divide the rest of the ingredients between the 5 bowls.
  • Right before serving, drizzle bowls with the sauce mixture.
