Apple Cinnamon Pancakes

Top fluffy pancakes with a cinnamon spiked, gooey apple topping.

Prep: 50 mins

SERVINGS

Makes: 2 cups of apple topping

PRINT

INGREDIENTS

  • 4 apples, washed and cut into small cubes
  • 2 cups water
  • 2 tablespoons brown sugar or 3 tablespoons maple syrup
  • 2 tablespoons butter or non-hydrogenated margarine
  • ½ to 1 teaspoon cinnamon (adjust to your taste)
  • 8 pancakes made using standard pancake mix

PREPARATION

  1. Place the apples and the water in a medium pot. Bring up to a low boil, cover and let cook for 20 minutes.
  2. Meanwhile, make the pancakes according to the package directions.
  3. After 20 minutes, add the rest of the apple topping ingredients to the pot.
  4. Let cook another 10 minutes and add more water if needed.
  5. Serve each pancake with a big spoonful of apple topping.
