Apple Cinnamon Pancakes
Top fluffy pancakes with a cinnamon spiked, gooey apple topping.

INGREDIENTS
- 4 apples, washed and cut into small cubes
- 2 cups water
- 2 tablespoons brown sugar or 3 tablespoons maple syrup
- 2 tablespoons butter or non-hydrogenated margarine
- ½ to 1 teaspoon cinnamon (adjust to your taste)
- 8 pancakes made using standard pancake mix
PREPARATION
- Place the apples and the water in a medium pot. Bring up to a low boil, cover and let cook for 20 minutes.
- Meanwhile, make the pancakes according to the package directions.
- After 20 minutes, add the rest of the apple topping ingredients to the pot.
- Let cook another 10 minutes and add more water if needed.
- Serve each pancake with a big spoonful of apple topping.
