Sheet Pan Fajitas

Sheet pan fajitas are a simple dinner that includes seasoned meat and vegetables roasted all on one pan and served in warm flour tortillas with your family’s favourite toppings.

INGREDIENTS

  • 2 tablespoons vegetable oil
  • 1 ½ pounds lean ground beef
  • 1 onion, sliced
  • 3 peppers, sliced
  • 1 package (24 grams) taco seasoning mix
  • Refried beans
  • Green onion, sliced
  • Jarred jalapenos, sliced
  • Rice
  • Hot sauce or chili flakes
  • Shredded cheese
  • Sour cream
  • Sliced avocado or guacamole
  • Salsa
  • Shredded cheese or shreds

PREPARATION

  1. Line a 11-inch x 7-inch baking casserole dish with aluminum foil. Preheat the oven to 425°F.
  2. Lay the beef out on the pan, pressing it down slightly to cover the bottom of the pan.
  3. Lay the vegetables evenly over the meat.
  4. Sprinkle the taco seasoning over the vegetables and the meat.
  5. Cook for 30-45 minutes or until the meat is well-cooked. Wrap the flour tortillas in aluminum foil and place them in the oven to warm during the last 5 minutes of cooking.
  6. Serve the warm tortillas alongside the meat, veggies, and toppings for the family to assemble their own.
