This is an easy-to-make, homemade hard taco recipe for both meat eaters and vegetarians.

INGREDIENTS

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1-pound lean ground meat or 1 package (about 300 grams) plant-based ground meat alternative
  • 1 can kidney or black beans (about 550 mL), rinsed and drained
  • 2 cups tomato salsa
  • 1-2 teaspoons chili powder (adjust to your taste)
  • 2-4 cups chopped iceberg lettuce or cabbage coleslaw mix
  • 2 cups shredded cheese or non-dairy shreds
  • 1 box hard tacos (contains 10 hard tacos)

PREPARATION

  1. Meat version: In a large skillet, add the oil, onion, and meat. Cook for 10-12 minutes or until the meat is well-cooked. Stir often, breaking apart larger pieces of meat.
  2. Plant-based version: In a large skillet, add the oil and onion. Cook for 10-12 minutes or until the onion is golden brown. If onions are dry, add 1 more tablespoon oil.
  3. Add the canned beans, 1 cup tomato salsa and the chili powder.
  4. Stir until combined. Cook for another few minutes until heated through.
  5. Let the family assemble their own tacos by using the meat mixture as the base topped with the remaining tomato salsa, the shredded lettuce or cabbage and the shredded cheese.
