INGREDIENTS
- 1 package prepared Mexican plant-based vegetable protein
- 2 cups dry long grain rice or 4 cups dry minute rice, preferably brown
- 2 tablespoons vegetable oil
- 2 onions, chopped
- 4 garlic cloves, chopped
- 2 carrots, shredded
- 1 ½ cups jarred salsa
Optional Topping Ideas
- shredded cheese
- 1 can (398 mL) chickpeas or kidney/black beans, rinsed and drained
- fried green peppers and onions
- chopped tomatoes
- sliced green onion
- sliced hot peppers
- sour cream or plain yogurt
- avocado slices or guacamole
PREPARATION
- Cook the rice and the plant-based vegetable protein according to package directions.
- Meanwhile, in a large frying pan, fry the onions, carrots and garlic in the oil until the onions are soft.
- Add the salsa and the plant-based vegetable protein until heated through.
- In each bowl, place rice, followed by the salsa mixture, and then top with your chosen toppings.
